Anzac biscuits

125g butter
1 tbs golden syrup
2 tbs water
1 tsp bicarb soda

 

1 cup rolled oats
1 cup coconut
1 cup plain flour
1 cup sugar

  1. Preheat the oven to 160o C. Line a biscuit tray with baking paper.
  2. Combine butter, golden syrup and water in a large bowl. Heat in the microwave until the butter is just melted.
  3. Gently stir in the bicarb soda.
  4. Combine the oats, coconut, flour and sugar in a large bowl, and make a well in the middle.
  5. Pour the liquid mix into the dry mix, and fold together quickly to combine.
  6. Roll 3cm balls of mixture and place on baking paper, allowing about 2cm between each.
  7. Bake for 15 minutes, until golden, and remove from the oven.

 

Makes about 35 to 40 biscuits.
