- Preheat the oven to 160oC. Line a slice tray with baking paper, ensuring that the paper comes above the edge of the tin.
- Mix together the cake mix and coconut in a bowl. Melt the butter, and mix into the dry mixture.
- Press the cake mixture into the pan evenly.
- Roughly cut the apple in the can, then spread over the base
- Lightly mix the eggs, then fold into the sour cheese.
- Spread the sour cream mixture over the apple.
- Bake for 15 min, until the topping is just set.
- When cool, cut into small squares.
