- Preheat the oven to 160o C and line a 20cm square tin with baking paper.
- Core and chop the apple. Do not peel it. Cook in very little water until soft, then mash and allow to cool.
- Cream the butter and sugar, the add the eggs and beat for a further minute.
- Fold in the cooled apple, flour and spices.
- Press into the tin and bake for 1&¼ hours.
This cake keeps fresh and moist for many days.
