Apple Spice C ake

1 cooking apple
¾ cup butter
¾ cup sugar
2 eggs
¼ cup cocoa

 

¾ cup self-raising flour
¼ tsp cinnamon
½ tsp nutmeg
¾ cup raisins

  1. Preheat the oven to 160o C and line a 20cm square tin with baking paper.
  2. Core and chop the apple. Do not peel it. Cook in very little water until soft, then mash and allow to cool.
  3. Cream the butter and sugar, the add the eggs and beat for a further minute.
  4. Fold in the cooled apple, flour and spices.
  5. Press into the tin and bake for 1&¼ hours.

This cake keeps fresh and moist for many days.
