Barbequed Chicken

Ingredients
6 to 8 chicken thigh fillets (these are skinned and boned)
½ can crushed tomatoes
2 tbs soy sauce
2 tbs honey
1 tsp ground ginger (or 1 tbs grated ginger)
1 clove garlic, crushed
1 chopped onion

Method

  1. Preheat the oven to 160 C.
  2. Marinade the chicken in the remaining ingredients.
  3. Line a baking tray with paper or foil, the place a rack in the tray.
  4. Arrange the chicken in a single layer on the rack.
  5. Pour the marinade over the chicken, and bake for 45 to 60 minutes.
  6. Alternately, the chicken can be barbequed for 20 minutes each side.
  7. Spread the meat mixture evenly into the casserole dish, and mound the mashed potato over the meat.
  8. Bake for ½ hour until the mash is beginning to brown.
