Method
- Preheat the oven to 160 C.
- Marinade the chicken in the remaining ingredients.
- Line a baking tray with paper or foil, the place a rack in the tray.
- Arrange the chicken in a single layer on the rack.
- Pour the marinade over the chicken, and bake for 45 to 60 minutes.
- Alternately, the chicken can be barbequed for 20 minutes each side.
- Spread the meat mixture evenly into the casserole dish, and mound the mashed potato over the meat.
- Bake for ½ hour until the mash is beginning to brown.
