Brownies

Ingredients

150g butter
1 dsp golden syrup
1 tsp vanilla
3 weetbix, crushed (or any other cereal)
½ cup sugar
½ cup coconut
1 cup SR flour
1 tbs cocoa

Icing

1 ½ cups icing sugar
1 tbs cocoa, extra
2 tbs hot water

Method

  1. Preheat the oven to 160 oC. Line a lamington tin (or small baking dish) with baking paper.
  2. Melt the butter, golden syrup and vanilla in a large bowl in the microwave.
  3. Mix in the dry ingredients.
  4. Press the mixture into the prepared tin and bake for 30 minutes.
  5. While the slice is cooking, mix the icing sugar, extra cocoa and hot water to make a stiff icing. If difficult to handle, heat in microwave for 20 sec.
  6. As soon as slice is removed from oven, carefully spread icing over the hot slice.
  7. Cut into small squares and allow to cool completely before storing in an airtight container.
