Ingredients
150g butter
1 dsp golden syrup
1 tsp vanilla
3 weetbix, crushed (or any other cereal)
½ cup sugar
½ cup coconut
1 cup SR flour
1 tbs cocoa

Icing
1 ½ cups icing sugar
1 tbs cocoa, extra
2 tbs hot water

Method
- Preheat the oven to 160 oC. Line a lamington tin (or small baking dish) with baking paper.
- Melt the butter, golden syrup and vanilla in a large bowl in the microwave.
- Mix in the dry ingredients.
- Press the mixture into the prepared tin and bake for 30 minutes.
- While the slice is cooking, mix the icing sugar, extra cocoa and hot water to make a stiff icing. If difficult to handle, heat in microwave for 20 sec.
- As soon as slice is removed from oven, carefully spread icing over the hot slice.
- Cut into small squares and allow to cool completely before storing in an airtight container.
