Cloudy Caramel Icing

½ cup butter
1 cup brown sugar
¼ cup cream
1 tsp vanilla
1&½ to 2 cups icing sugar

  1. Heat butter in a medium bowl until just melted.
  2. Add brown sugar and cream, and boil for 1 minute to dissolve all of the sugar.
  3. Add most of the icing sugar and the vanilla, and beat for at least 5 minutes until the frosting is fluffy.
  4. If too soft, add more icing sugar. If too thick, heat the frosting for 20 sec in the microwave, and if that is not sufficient, add milk in ½ tsp lots.
