Caramel Slice

½ cup brown sugar
1 cup self-raising flour
1 cup coconut
125g margarine or butter

400g can condensed milk
2tbs golden syrup
1dsp butter

Topping

½ cup drinking chocolate
90g copha
1tsp vanilla essence

  1. Preheat the oven to 160o C. Line a lamington tray with baking paper.
  2. Combine sugar, flour and coconut in a large bowl.
  3. Melt margarine and mix into dry ingredients.
  4. Press mix into the prepared tin and bake for 15 min.
  5. Combine condensed milk, syrup and butter in a small bowl and heat in the microwave until melted together. Pour the filling over the cooked base.
  6. Bake for another 10 minutes.
  7. Combine copha, chocolate and vanilla and heat on medium heat until just melted.
  8. allow chocolate mix to cool slightly, then carefully spread over the cooked filling.
  9. Allow to cool at room temperature until the chocolate topping has set.
  10. When cool, cut into squares and store in an airtight container.

 

Optional

Replace the mixed fruit with 1 grated unpeeled apple and 1 cup sultanas.
