Coconut Ice

125g copha
500g icing sugar
250g coconut
1 tsp vanilla
2 egg whites, whipped
red food colouring

  1. Line a small slice tray with foil.
  2. Melt the copha over low heat.
  3. Combine the icing sugar and coconut and mix well.
  4. Add the vanilla, egg whites and copha and stir until the mixture is uniformly crumbly.
  5. Press half of the mixture into the slice tray, levelling the surface.
  6. Colour the remaining mixture with the red colouring and spread evenly over the white mixture.
  7. Press to combine the two layers.
  8. Refrigerate until hard, then cut into small squares, about 3cm across.
