Date, Apple and Pecan loaf

Ingredients

2 apples, diced
1 cup apple juice
1 cup chopped dates
2 tbs honey
2 cups self-raising flour
½ cup pecans
2 tbs icing sugar
2 tsp salt

Method

  1. Preheat the oven to 160 oC. Line a loaf tin with baking paper.
  2. Heat the apple, apple juice, honey and dates in the microwave until just simmering. Allow to cool.
  3. Combine the pecans, flour, sugar and salt in a large bowl.
  4. Add the cooled fruit mixture and mix until just combined.
  5. Pour into the baking tin and bake for an hour.
  6. Served sliced thickly and spread with butter.

For variations, replace the pecans with walnuts and pears instead of apples.
