Dateloaf

Ingredients

1 cup dates, quartered
1 cup boiling water
1 cup brown sugar
1 tbs butter or margarine
1 tsp bi-carb soda
2 cups SR flour
1 cup walnuts
1 tsp mixed spice
½ tsp cinnamon
2 eggs, beaten

Method

  1. Preheat the oven to 160 oC.
  2. Mix the dates, water, sugar, butter and bi-carb, and allow to stand until cool (1/2 to 1 hour).
  3. Mix the dry ingredients together.
  4. Combine the date mix with the flour mix and the egg, and fold together until combined.
  5. Line a loaf tin with baking paper, then pour the mixture in, leveling the top.
  6. Bake for 45 minutes.
