- Preheat the oven to 160o C. Line a lamington tray with baking paper.
- Cut the figs into small pieces into a medium bowl.
- Add the flour and the sugar and toss until the fruit is evenly coated.
- Add the eggs, vanilla and lemon juice and fold until the mixture is combined.
- Press into the prepared tray and spread evenly.
- Bake for 20 minutes, until the top is just brown, and remove from the oven.
- When cool, cut into squares and store in an airtight container.
Note
This is a dairy-free low-fat fudgy slice.
You can also substitute gluten-free flour.
