Fig Slice

1 pkt soft figs, chopped
1 cup brown sugar
2 eggs
1 tbs lemon juice
1 tsp vanilla
1 cup SR flour

 


  1. Preheat the oven to 160o C. Line a lamington tray with baking paper.
  2. Cut the figs into small pieces into a medium bowl.
  3. Add the flour and the sugar and toss until the fruit is evenly coated.
  4. Add the eggs, vanilla and lemon juice and fold until the mixture is combined.
  5. Press into the prepared tray and spread evenly.
  6. Bake for 20 minutes, until the top is just brown, and remove from the oven.
  7. When cool, cut into squares and store in an airtight container.

 

Note

This is a dairy-free low-fat fudgy slice.
You can also substitute gluten-free flour.
