Fried Rice

1 cup rice
2 tbs oil
1 onion, sliced into thin wedges
½ capsicum, chopped
½ cup frozen peas
½ cup frozen corn
2 rashers bacon, diced

 

1 or 2 eggs
1 tbs soy sauce

chopped ginger, shallots, prawns, shredded chicken, diced ham - limited only by your imagination!

Method

  1. Boil rice until al-dente: brown rice 25 min, white rice 10 min. Rinse with cold water and allow to drain.
  2. Heat the oil in a wide pan and cook the onion and bacon until just starting to go clear.
  3. Add the frozen vegetables and stir-fry for a couple of minutes.
  4. Push the mix to the edges of the pan, and ensure that the centre is clear. Add a little more oil if necessary.
  5. Turn the heat down and break the eggs into the centre of the pan, and stir gently while cooking ; they will become partly scrambled.
  6. Add the rice and turn until heated through.
  7. Add the soy sauce and any remaining ingreadients, and heat for a further minute
  8. Serve immediately .
