Boiled Fruit Cake

125g butter
1 cup brown sugar
1 pkt mixed fruit
1 tsp bicarb soda
1 to 2 tbs jam
1 cup water

 

1 1/2 cups self-raising flour
1/2 cup plain flour
2 eggs, lightly beaten
1 tsp mixed spice

  1. Preheat the oven to 160o C. Line a 20cm square tin with baking paper.
  2. Heat the butter, brown sugar, fruit, bicarb soda, jam and water until the butter is just melted. Allow to cool.
  3. Combine the flours and mixed spice in a large bowl, and fold in the cooled fruit mixture and the egg.
  4. Pour into the prepared tin and spread with a slight dip in the centre.
  5. Bake for 1 1/2 hours, until the top is springy to touch, and remove from the oven.

 

Optional

Up to half of the water may be replaced with sherry for a richer flavour.
