125g butter
1 cup brown sugar
1 pkt mixed fruit
1 tsp bicarb soda
1 to 2 tbs jam
1 cup water

1 1/2 cups self-raising flour
1/2 cup plain flour
2 eggs, lightly beaten
1 tsp mixed spice

- Preheat the oven to 160o C. Line a 20cm square tin with baking paper.
- Heat the butter, brown sugar, fruit, bicarb soda, jam and water until the butter is just melted. Allow to cool.
- Combine the flours and mixed spice in a large bowl, and fold in the cooled fruit mixture and the egg.
- Pour into the prepared tin and spread with a slight dip in the centre.
- Bake for 1 1/2 hours, until the top is springy to touch, and remove from the oven.
Optional
Up to half of the water may be replaced with sherry for a richer flavour.
