Fruit Slice

125g butter
1 cup sugar
2 eggs
1 tsp vanilla
1 tsp mixed spice

 

2 tbs milk
2 cups self-raising flour
1 cup mixed fruit
cinnamon sugar

  1. Preheat the oven to 160o C. Line a lamington tray with baking paper.
  2. Cut the butter into the flour until it resemble breadcrumbs.
  3. Add all the remaining ingredients, except the cinnamon sugar.
  4. Pour into the prepared tray and spread evenly.
  5. Sprinkle cinnamon sugar thickly and evenly over the top.
  6. Bake for 30 minutes, until the top is springy to touch, and remove from the oven.
  7. When cool, cut into squares and store in an airtight container.

 

Optional

Replace the mixed fruit with 1 grated unpeeled apple and 1 cup sultanas.
