Lemon Cordial

1½ cups lemon juice (6 to 8 lemons)
1½ cups sugar
1½ cups boiling water
½ tsp citric acid
1 tsp tartaric acid

Lemon cordial

Method

  1. Combine ingredients into a small saucepan and bring to the boil.
  2. Strain the cordial and pour into a clean bottle. Makes about 750mL cordial.
  3. This codial may be stored in the fridge for up to 3 months.
  4. Serve 1 part cordial to 4 parts water (or to taste).

Optional:

  • Substitute any other citrus fruit for a variety of flavours.
  • The zest (finely grated lemon rind) of 1 or 2 lemons may be added to the lemon juice for a sharper flavour.
  • If the cordial is too tart, reduce or omit the citric acid.
  • The citric and tartaric acids are preservatives. They do not need to be added if the cordial is to be consumed within a week.
