Mushrooms Bordelaise

Ingredients
250g cap mushrooms
salt & pepper to taste
25g butter (or ¼ cup oil)
1 clove garlic, crushed
2 shallots
1 tbs chopped parsley

Method

  1. Clean mushrooms. If required, separate stems and cut into smaller pieces. Season with salt and pepper.
  2. Heat the butter to sizzling and add mushrooms and garlic. Turn heat down if required and cook for 5 min until the mushrooms begin to golden.
  3. Add the shallots and cook a further 2 minutes.
  4. Transfer to serving dish and sprinkle with parsley. Serve immediately.

Serves 4.

Note: This salad was a favorite of my children's, although it has dubious nutritional value. It is great for a children's party where a "plate" is requested.
