Okonomiyaki

(Japanese Pancake)

Ingredients
1 cup plain flour
3/4 cup soup stock or water
2 eggs
1/4 of a small cabbage
1tbs oil
thinly sliced pork, beef or prawns
½ tsp shredded ginger
2 tbs shallots or leeks



3tbs mayonnaise
3 tbs tomato sauce
1 tsp soy sauce
1 tbs Worcestershire sauce

Method

  1. Cut the cabbage into very thin slices. Slice meat and vegetables and set aside.
  2. Beat the egg in a bowl and add the stock or water.
  3. Add flour in the bowl and mix well to a smooth paste.
  4. Add the sliced cabbage to the flour mixture.
  5. Heat the oil in a non-stick pan or a frying pan, and fry the meat until heated through.
  6. Pour the flour mixture over the meat in the pan to make a large pancake.
  7. Cook a few minutes and flip the pancake and cook for a few more minutes.
  8. Combine the tomato, soy and worcestershire sauces. Put the combined sauces and mayonnaise on top of the pancake.
  9. Sprinkle remaining ingredients on top.
  10. Divide the pancake between two plates and serve immediately.
