Pinacolada Slice

Ingredients

1 cup SR flour
1 cup coconut
1 cup sugar
125g butter or margarine, melted
2 limes
2 eggs,beaten
2 tbs butter or margarine
2 cups icing sugar
1 to 2 tbs milk

Method

  1. Preheat the oven to 160 oC.
  2. Finely grate the limes to make zest, then squeeze to retain the juice.
  3. Mix the flour, coconut and sugar together.
  4. Combine the dry mix with the lime juice, butter and egg, and beat until just mixed.
  5. Line a lamington tin with baking paper, then pour the mixture in, leveling the top.
  6. Bake for 25 to 30 minutes. Allow to cool in the tin.
  7. Beat the additional butter and lime zest and add half of the milk.
  8. Add the icing sugar ½ cup at a time, beating well after each addition, until light and fluffy. If necessary, add sufficient of remaining milk to make a firm but fluffy icing.
  9. Lightly spread over the cooled slice.

This slice can also be made with lemons instead of limes, and it makes a great moist cake when made with milk and baked in a 20cm cake tin.
