Method
- Preheat the oven to 160 oC.
- Finely grate the limes to make zest, then squeeze to retain the juice.
- Mix the flour, coconut and sugar together.
- Combine the dry mix with the lime juice, butter and egg, and beat until just mixed.
- Line a lamington tin with baking paper, then pour the mixture in, leveling the top.
- Bake for 25 to 30 minutes. Allow to cool in the tin.
- Beat the additional butter and lime zest and add half of the milk.
- Add the icing sugar ½ cup at a time, beating well after each addition, until light and fluffy. If necessary, add sufficient of remaining milk to make a firm but fluffy icing.
- Lightly spread over the cooled slice.
