Potato Salad

Ingredients
1 kg red-skinned potatoes (eg pontiacs)
1 cup mayonnaise
½ cup sour cream
½tsp mustard
salt & pepper to taste

Optional extras
2 to 4 shallots, chopped
1 bacon rasher, chopped and cooked until crispy
1 hard boiled egg, finely diced

Method

  1. Dice the potatoes into 1cm pieces, leaving the skins on. Place into a large saucepan of boiling water.
  2. Boil for 5 minutes, until just cooked, then remove from the heat. Drain the potatoes, and immerse in cold water to cool them quickly.
  3. Combine the remaining ingredients and gently fold through the potatoes.
  4. Transfer to serving dish.
  5. Chill until served.
