Scones

Ingredients

2 cups SR flour
¼tsp salt
1 tbs butter or margarine
¾ cup milk
additional milk for glazing

Optional: Try one of these variations

  • 1 cup dates, chopped into quarters
  • 1 cup mixed fruit
  • 1 cup mashed pumpkin
  • 1 cup grated cheese and dabs of vegemite
  • 1tsp sugar and 150g choc chips
  • 1tsp instant coffee and 200g melted chocolate added to the milk mix

Method

  1. Preheat the oven to 180 oC. Line a small baking tray with baking paper.
  2. Lightly dust the work surface with flour.
  3. Sift the flour and salt together onto the work surface, and make a well in the centre. Add the optional ingredients (except the coffee/chocolate) to the flour mix.
  4. Microwave the butter and milk together for 1 minute, then pour into the flour.
  5. Lightly knead the mixture until it starts to come together. Knead just enough to ensure that the dough has no wet or floury pockets.
  6. Press out with your fingers to about 2cm thick. Use a round (or a drinking glass) to cut scones from the dough.
  7. Pack the scones closely onto the baking tray, and glaze with the additional milk.
  8. Bake for 10 to 15 minutes until just golden. Serve immediately.

Makes 10 to 12 scones.
