Ingredients
500g spinach (eg frozen)
2 onions, chopped
25g butter
3 eggs
½ cup shallots, chopped

250g grated cheese
1tsp nutmeg
½ cup chopped parsley
salt & pepper to taste
1 pkt puff pastry

Method
- Preheat the oven to 200oC as on pastry package. Line 2 cookie sheets with baking paper.
- Thaw all pastry sheets.
- Chop the spinach finely (if not already) and steam for 2 minutes. Drain and cool.
- Saute the onions and shallots in the butter until transparent, but not browned. Remove from heat.
- Combine the spinach, the cooked onions and shallots, eggs, cheese, nutmeg and parsley. Season to taste.
- Cut each pastry sheet in half to make 2 rectangles per sheet.
- Place a large tbs of mixture at one end of a rectangle. Fold the short end of the pastry rectangle over the mixture to the side to make a triangle. Continue to fold the triangle over twice more to complete the turnover.
- Repeat for all the pastry rectangles.
- Place the triangles onto the prepared cookie sheets and bake for 20 min or until golden.
