Spinach Turnovers

Ingredients

500g spinach (eg frozen)
2 onions, chopped
25g butter
3 eggs
½ cup shallots, chopped

 

 

250g grated cheese
1tsp nutmeg
½ cup chopped parsley
salt & pepper to taste
1 pkt puff pastry

Method

  1. Preheat the oven to 200oC as on pastry package. Line 2 cookie sheets with baking paper.
  2. Thaw all pastry sheets.
  3. Chop the spinach finely (if not already) and steam for 2 minutes. Drain and cool.
  4. Saute the onions and shallots in the butter until transparent, but not browned. Remove from heat.
  5. Combine the spinach, the cooked onions and shallots, eggs, cheese, nutmeg and parsley. Season to taste.
  6. Cut each pastry sheet in half to make 2 rectangles per sheet.
  7. Place a large tbs of mixture at one end of a rectangle. Fold the short end of the pastry rectangle over the mixture to the side to make a triangle. Continue to fold the triangle over twice more to complete the turnover.
  8. Repeat for all the pastry rectangles.
  9. Place the triangles onto the prepared cookie sheets and bake for 20 min or until golden.
