Ingredients (for 2 onions)
2 large onions, peeled with root base intact
1 slice bacon
1 tsp butter
2 slices of fresh breadcrumbs

½ tsp powdered stock
2tsp chopped parsley
pinch ofmarjoram
salt & pepper to taste
additional butter

Method
- Preheat the oven to 170oC and line a baking tray with baking paper.
- Remove centres of the onions, leaving about 3 layers and the base intact.
- Chop the onion flesh and bacon finely, and saute in the butter until browned.
- Combine the cooked mixture with the breadcrumbs, herbs, powdered stock and seasonings, then stuff into the onion shells very firmly. Dab a little butter on the top of the stuffing.
- Bake the onions for about an hour, until the top is crisp and golden.
