Stuffed Onions

Ingredients (for 2 onions)

2 large onions, peeled with root base intact
1 slice bacon
1 tsp butter
2 slices of fresh breadcrumbs
 

 

½ tsp powdered stock
2tsp chopped parsley
pinch ofmarjoram
salt & pepper to taste
additional butter

Method

  1. Preheat the oven to 170oC and line a baking tray with baking paper.
  2. Remove centres of the onions, leaving about 3 layers and the base intact.
  3. Chop the onion flesh and bacon finely, and saute in the butter until browned.
  4. Combine the cooked mixture with the breadcrumbs, herbs, powdered stock and seasonings, then stuff into the onion shells very firmly. Dab a little butter on the top of the stuffing.
  5. Bake the onions for about an hour, until the top is crisp and golden.

Optional: 50g minced beef or lamb mince can be substituted for the bacon.
