Tomato Relish

Ingredients
4 large onions, finely chopped
3kg tomatoes, chopped
½ cup salt



600mL vinegar
500g sugar
1 ½ tbs mustard
½ tsp cayene pepper
1 tbs curry powder

Method

  1. Set aside bottles with a combined volume of at least 2L. Sterilise bottles and lids by standing them in an oven at 120oC for ½ hour.
  2. Combine onions and tomatoes in a large bowl. Sprinkle with salt and allow to stand overnight.
  3. Drain the onion and tomatoes.
  4. Combine with remaining ingredients in a large saucepan and bring to the boil.
  5. Simmer for ½ hour until the mixture thickens. If required, a small amount of flour could be used to thicken the relish further.
  6. Bottle in warm, sterilised bottles and seal lids. Allow to cool completely before labelling and storage.
