Chickenpea Taco Salad
Ingredients
- Pulled chicken breast
- 1 can chickpeas, drained
- ½ red onion, finely diced
- Handful of chopped coriander
- 1 avocado, diced
- 100g feta, diced
- Handful of tortilla strips
Lime Dressing

4 tablespoons extra virgin olive oil

Juice of 1 lime
Instructions

Mix chickpeas, onion and coriander

Stir through dressing

Add chicken, feta and avocado

Serve with tortilla strips on top so they don't get soggy from the dressing
