Chorizo, Capsicum & Borlotti Bean Salad
Ingredients
- 1 tin borlotti beans, drained
- 1 smoked chorizo, sliced
- ½ jar marinated roasted capsicums
- Small bag of rocket and/or baby spinach
- Feta or bocconcini
Parsley & Paprika Dressing
- 3 tablespoons extra virgin olive oil (or the oil from the marinated capsicums)
- 3 tablespoons balsamic vinegar
- 1 teaspoon smoked paprika
