Banana Cake

½ cup butter
½ cup sugar
3 to 5 ripe bananas, mashed
2 eggs

 

1 tsp vanilla
1 tsp bicarb soda
2 tbs milk
1 & ½ cups self-raising flour

  1. Preheat the oven to 160o C and line 2 sandwich tins with baking paper.
  2. Cream the butter and sugar, the add the eggs and beat for a further minute.
  3. Dissolve the bicarb and vanilla in the milk.
  4. Fold in the banana, flour and milk.
  5. Pour into the tins and bake for ½ hour.
  6. When cold, join with vanilla cream and ice with cloudy caramel icing.

The cake may alternately be baked in a deeper tin for ¾ hour.
